Poppy pastry

WHAT DO YOU NEED?

125 g     butter

20 g            vanilla sugar

3 Tbsp       sugar

10 g            baking soda, phosphate free

200 g          poppies

200 g         spelt flour

4 dl            rice milk (works just as well with any other plant-based milk or even water)

OPTIONAL:

sugar for icing

PREPARATION:

Put butter (room temperature), sugar and vanilla sugar into a bowl and mix it with a food mixer. Add flour, baking soda, poppies and rice milk and keep on mixing it.

The consistency should be “liquid” enough so you can pour it out of the bowl. Add more rice milk or water if it’s not.

Put in a baking sheet covered with baking paper.

Bake on 180 degrees Celsius for about 25 min. Check if it’s done using a toothpick. It will come out clean when it is done.

Cut it when it has cooled down completely and serve with some icing sugar on top if you want.
