What do you need?
- 250 g Swiss Chard
- 250 g Red Lentils (Some lists say they are high in histamine, some say low; I can tolerate them perfectly; please try for yourself)
- 2 Onions
- 1 Red Pepper
- 4 Big Carrots
- 4 Garlic Cloves
- 2 Pieces of Ginger (2-3 cm)
- 2 tbs Sesame
- 2 tbs Coconut Oil
- 400 ml Coconut Milk
- 400 ml Broth or Water
- 1/2 tbs Turmeric Powder (or Curry Powder; I even put a whole tablespoon because I just LOVE turmeric!)
Clean and wash the chard really well. This is how i do it:I wash my sink and rinse the chard in it. After rinsing I leave it in a sink full of water plus 2 tbs of baking soda for at least 12 minutes. (This is how you get rid of all the pesticides. I advise you to do this for all the fruits and vegetables you eat.) Dice the stems and cut the leaves into strips.
Peel onions, garlic and ginger. Dice onions, chop garlic and ginger. Dice peppers and carrots. Rinse the lenses in a sieve and drain.
Heat the coconut oil and fry the onions, garlic and ginger in a glassy sauce. Add peppers. After a bit add sesame and fry briefly. Add lentils, Swiss chard coconut milk and broth (or water). Season with salt and cook for 5 minutes before adding carrots. Keep cooking for 10 more minutes over medium heat.
After it is done cooking, remove from the heat and add turmeric (or curry) powder. (Always add turmeric at the end of the cooking process to avoid loosing curcumin!)
Season with more salt if you need and sprinkle a few sesame seeds and turmeric on top for decoration.
