I promise you will love it! (Who ever tried this recipe – my mom’s – could agree that this is the best Pašticada they have ever tried :D)
WHAT DO YOU NEED? (enough for around 4-5 people)
1,3 kg onions
1 kg beef shoulder (preferably from a young cow)
5 leaves bay leaf
1,5 Tbsp breadcrumbs – check out my homemade low-histamine Breadcrumbs
1 Tbsp fresh parsley
3 cloves garlic
3 Tbsp olive oil
salt to your taste
white pepper to your taste
OPTIONAL: (this goes in the original recipe but is not low-histamine)
200 g prunes
150 ml red wine
Dice onions, slice garlic, cut parsley to little pieces and slice beef to roughly 1 cm thickness.
Fry the onions in oil and once they are caramelized before you add the meat. Fry it together for about 15 min and mix it gently now and then. Add water until it covers everything by about 5 cm.
Add bay leafs and salt. Let it simmer for 1-3 hours (depending on the meat – it is done when the meat becomes soft). Mix it gently now and then.
Add garlic, pepper and some breadcrumbs if you want to thicken the sauce.
When the cooking is done, add fresh parsley.
For all of us with histamine intolerance – the dish is done.
Now I take out the amount of meat and sauce I plan to eat and continue adding other ingredients for my friends and family.
NOT HISTAMINE FREE:
Add prunes and red wine and cook for another 30 min. Enjoy it’s beautiful smell 😀
This dish is traditionally served with gnocchi or homemade pasta. You can also serve it with cooked potato or rice.
